Cinnamon apple chia pudding – Vegetarian

Sometimes, the best recipes are born from necessity. I had some beautiful apples, just starting to wrinkle, and couldn’t bear to waste them. Inspiration struck in the form of a delicious, comforting hug: Cinnamon Apple Chia Pudding.

This isn’t just a desert; it’s a rescue mission for those forgotten fruits!

We’re taking simple, wholesome ingredients – chia seeds, coconut milk, those lovely apples, a dash of cinnamon, and a touch of sweetness – and transforming them into a creamy, satisfying, and completely vegetarian treat. It’s the perfect way to start your day or a guilt-free dessert that’s as good for you as it tastes. Plus, it’s incredibly easy to throw together, letting you savour the cozy flavours of fall any time of year.

Ingredients: (for 4 portions)

  • 400 ml coconut milk
  • 200 g chia seeds
  • 200 ml sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 medium apples
  • 80 g butter
  • 1 teaspoon vanilla essence
  • 2 sachets vanilla sugar
  • 50 g brown sugar
  • 4 tablespoons date syrup (honey or agave syrup if you prefer)
  • optional: cocoa nibs, fresh mint leaves or chocolate chips for garnish

Preparation :

In a bowl, mix the chia seeds with the coconut milk and condensed milk. Transfer evenly into 4 containers and leave overnight or at least 6 hours so that the chia seeds have time to absorb the liquids.

Peel and dice the apples. Add the butter to a pot, and when it is melted, add the apples along with the spices, vanilla extract, the sachets of vanilla sugar and the brown sugar. Mix well and cook over medium heat until the apples are soft. Stir the pot periodically,

Remove the pudding bowls from the refrigerator and add a teaspoon of date sauce to each bowl. Spread evenly.

Place the cooked apples in a food processor and blend well until you obtain a paste.

Divide the apple mixture equally into the 4 pudding bowls.

Sprinkle cocoa nibs on top and garnish with fresh mint leaves.

Serve it cold, for breakfast, or anytime during the day as a dessert or snack.
