
This curry shrimp pasta with courgette is the perfect example of how an easy recipe can deliver an incredibly bold combination of flavours.
Juicy shrimp, tender pasta, and lightly sautéed courgette come together in a creamy curry sauce that’s comforting, fragrant, and just the right amount of exotic.
Ready in no time, this dish is ideal for busy weeknights, quick lunches, or even meal prep, since the flavours deepen beautifully as it sits. Despite its simplicity, every bite bursts with warmth and colour, making it a standout recipe
Ingredients: (for 3 portions)
- 1 tablespoon sweet paprika
- 1 tablespoon curry powder
- 1 red onion
- 60 g tomato paste mixed with 1 tablespoon sugar
- 2 Roma tomatoes
- 1 courgette (zucchini)
- 300 g shrimp
- 250 g pasta
- 150 g cooking cream
- fresh chives
- 60 ml white wine
- salt and pepper
- olive oil

Preparation:
Cook the pasta in a pot of salted water, following the package instructions. Once the pasta is cooked, drain it and set it aside, making sure to keep some of the cooking water in a bowl or pot.
While the pasta is boiling, wash, peel, and chop the vegetables as needed, just like in the image below. Finely mince the garlic, dice the tomatoes, and chop the onion and chives. Cut the courgette in half lengthwise, then slice it into even pieces.

In a deep, roomy pan, heat a little oil and sauté the onion and garlic for a few minutes, stirring often. Add the paprika and curry powder, mixing well to release their aroma. Stir in the tomato paste mixed with sugar, then pour in the white wine. Cook over medium heat, stirring, until the alcohol evaporates and the sauce becomes fragrant.

Next, pour in the cooking cream along with about 4 ladles of the pasta water. Stir well and let the sauce simmer over medium heat for 6–8 minutes, stirring occasionally, until it begins to thicken. Add the tomatoes and mix again, cooking for another 2–3 minutes. Finally, add the cooked pasta and toss everything together so the sauce coats the pasta evenly and all the ingredients are well combined.
Transfer everything to a serving bowl and set it aside for the moment.

In a pan, heat a little oil and sauté the courgette slices until they start to brown. Season with salt and pepper and cook for a few minutes, just until they develop some color. Once ready, spread them evenly over the pasta in the bowl.

In the same pan, add a bit of oil and cook the shrimp, seasoning them with a little salt and pepper. Sauté them just until they turn pink and start to develop colour. Once ready, transfer them on top of the pasta as well.

Sprinkle the chopped chives over everything, and it’s ready to serve.
Simple and quick to make, packed with flavour, and built on an unexpected combination of ingredients, this pasta dish is as delicious as it is easy and fast to prepare.
