This oven-baked tomato pasta is the perfect go-to! Bursting with juicy tomatoes, sweet peppers, tender onions, melted cheese, and a hint of garlic, it’s a cosy, comforting dish that everyone will love: from kids to adults.
The best part? It’s fast and super easy to prepare: just toss the veggies, mix with pasta and sauce, sprinkle with cheese, and let the oven do its magic. In no time, you’ve got a warm, cheesy, and delicious pasta ready to serve, ideal for weeknight dinners, family meals, or even a quick lunch that feels extra special.
Ingredients: (for 3 portions)
- 1 yellow onion
- 1 tablespoon Italian seasoning mix
- 1 bell pepper
- 2 medium tomatoes
- 2 garlic cloves
- 180 g pasta
- 200 g tomato purée
- 40 g tomato purée mixed with 1 tablespoon smoked paprika and 1 teaspoon sugar
- 50 g grated Gouda cheese
- 100 g grated mozzarella
- A few sprigs of fresh basil
- Salt and pepper, to taste
- A drizzle of olive oil

Preparation:
Wash and clean all the vegetables. Cut the bell pepper and tomatoes into small cubes, and finely chop the onion and garlic.
Preheat the oven to 200°C (390°F) and let it heat up.
Cook the pasta in a pot of salted water according to the package instructions. Once done, drain and return it to the pot, set aside.

In a pan, heat a little olive oil and sauté the onion and garlic for 2–3 minutes until fragrant. Add the bell pepper and Italian seasoning, stirring well, and cook for another 4 minutes, stirring occasionally.

Add the tomato purée, the tomato mixture with smoked paprika and sugar, and the chopped tomatoes. Stir well, season with a little pepper, and cover the pan. Cook for about 3 minutes with the lid on. Remove from heat and pour the sauce over the cooked and drained pasta. Finally, add the 50 g of grated Gouda cheese and mix everything thoroughly.

Transfer everything into an oven-safe dish and bake for about 10 minutes, or until the cheese is beautifully golden. Meanwhile, wash and chop the basil.

Once baked, remove the dish from the oven, let it rest for 10 minutes, sprinkle with the chopped basil, and serve.
