
This Finnish berry tart is a comforting and delicious dessert that brings a taste of Nordic tradition to your kitchen. Made with a soft, buttery base, topped with a vibrant layer of mixed frozen berries, and finished with a golden, crumbly topping, it’s the perfect balance of sweet and tart.
Simple to prepare and full of natural flavor, this tart is ideal for cozy weekends, family gatherings, or whenever you crave a rustic homemade treat. The hint of vanilla sugar enhances the berries, while the buttery crumble adds irresistible texture. Serve it as is or with a dollop of whipped cream or vanilla ice cream for a truly indulgent finish.
Ingredients:
Crust:
- 100 g melted butter (or softened at room temperature)
- 75 g sugar
- 2 small eggs
- 1 teaspoon baking powder
- 150 g all-purpose flour
- A pinch of salt
Filling:
- 1 medium bag (~450 g) frozen mixed berries
- 2 packets of vanilla sugar
Crumble topping:
- 70 g cold butter
- 50 g sugar
- 55 g flour


Preparation:
Preheat the oven to 200°C (390°F). In a bowl, beat the softened butter and sugar for about 3 minutes until light and creamy. Add the eggs one at a time, mixing well after each addition. Then incorporate the flour, salt, and baking powder, mixing until everything is fully combined.
Pour the batter into a lightly buttered springform pan and smooth the surface. Evenly spread the frozen berries over the batter, then sprinkle the vanilla sugar on top of the fruit.
In a separate bowl, use your hands to mix the cold butter, sugar, and flour until you get a crumbly mixture. Sprinkle this evenly over the berries.
Bake in the preheated oven for about 35–40 minutes, or until the crumble topping is golden brown. Allow the tart to cool completely before slicing.
