

Pork wraps with a citrus twist: a vibrant fusion of Middle Eastern flavours and fresh zesty notes.
Tender pork is seared to perfection with a fragrant spice blend, then layered into soft wraps brushed with za’atar and lightly baked for extra aroma and texture. Each wrap is topped with juicy tomatoes, fresh orange pieces, and a generous drizzle of sumac and cream dressing, all brought to life with fresh herbs and citrus notes. It’s a bold, refreshing, and satisfying dish.
Perfect for a flavourful lunch, casual dinner, or weekend gathering.
Ingredients: (for 4 wraps/portions)
- 4 medium tortilla wraps (20 cm diameter)
- 10 g za’atar
- 2-3 teaspoons sumac
- a mixture of spices: a teaspoon of sweet paprika, a teaspoon of cumin powder and a teaspoon of ground coriander
- 100 g cream cheese
- 2 onions
- 2 medium tomatoes
- 1 orange
- 20 ml olive oil
- 400 g minced pork
- 1 red pointy pepper
- 5 grams fresh parsley
- 5 grams fresh mint
- salt and pepper
- some honey (optional)

Preparation:
Begin by washing and prepping all the vegetables. Slice the onion into quarters lengthwise, then cut into thin, even strips. Halve the pepper lengthwise and slice it into thick pieces, about 1 cm wide. Rinse and chop the fresh herbs, then dice the tomatoes. Cut the orange in half: squeeze the juice from one half into a bowl, peel the other half, and chop it into small cubes.

Heat a bit of olive oil in a frying pan. Once hot, add the onion, pepper, and the spice mix. Sauté for 3–4 minutes until fragrant, then add the pork and stir well to coat. Cook until the meat is lightly browned, then season with salt and pepper to taste.
Turn off the heat and set it aside.

In a bowl, mix together the diced tomatoes and orange, then season with salt, pepper, and a splash of olive oil.
In a separate bowl, stir together the cream cheese, sumac, and freshly squeezed orange juice until smooth and well combined.

Preheat the oven to 200°C with the fan setting on. While it heats up, place baking paper in a tray and lay the wraps on it. Drizzle a bit of olive oil over each wrap, spread it evenly using a pastry brush, then sprinkle za’atar seasoning generously over the top.
Pop the wraps into the preheated oven for a few minutes: just until the edges start to turn golden and the za’atar infuses them with its rich aroma.

Once the wraps are ready, it’s time to serve.
Lay out all the toppings and ingredients separately on the table, allowing everyone to build their wraps exactly how they like, adding as much or as little of each ingredient as they prefer.
