Savory mushroom loaf with wild forest mushrooms – Vegetarian

A delicious plant-based dish, this mushroom loaf is made with a rich mix of wild forest mushrooms, fresh herbs, and aromatic spices. Wrapped in savory flavors and a tender texture, it’s the perfect centerpiece for a festive meal or a comforting everyday dish. Baked until golden, it’s hearty, earthy, and satisfying. Ideal for vegetarians and mushroom lovers alike. Serve it warm with a dollop of mustard or alongside your favorite side dishes.

Ingredients:

  • 1 bag of frozen wild forest mushrooms
  • 1 container (500g) of oyster mushrooms (or button mushrooms, depending on what you find at the store; you can skip the wild mushrooms if unavailable and use other types instead)
  • 1 bunch of green onions
  • 1 bunch of dill
  • 3–4 eggs
  • Salt and pepper
  • 200 g grated mozzarella
  • 4–5 tablespoons flour
  • 1 packet of baking powder

Preparation:
Wash and cut the mushrooms into medium-sized cubes or pieces, then place them in a pot with a little salt and boil. While the mushrooms are cooking, finely chop the green onions and dill, and beat the eggs in a bowl with salt and pepper.

After the mushrooms have boiled for about 10 minutes, drain them under cold running water. Rinse well, then transfer to a colander to drain thoroughly. Once drained, place the mushrooms in a mixing bowl.

Add the beaten eggs, chopped green onions, dill, flour, grated mozzarella, and baking powder to the mushrooms. Mix everything together thoroughly.

Grease a loaf pan with butter and dust it with flour. Pour the mixture into the prepared pan.

Bake in a preheated oven at 170°C (340°F) for about 50 minutes, or until a toothpick inserted in the center comes out clean.
