

Delicious and ultra-easy to prepare. Although it’s not the most photogenic dish I’ve made, I promise you that even is it’s the ” Ugly Duckling” of foods and that it’s absolutely delicious. And what’s really important is that everything happens in one pot. ☺️
It will only take 10 minutes to assemble everything, and then all you have to do is wait for the oven to do its job 💜
Ingredients: (for 2 servings)
- 400 g chicken meat (I had boneless thighs; you can use what you like or what you have: breast, drumsticks, etc.)
- 3 large spoons of pesto
- 4 cloves of garlic
- a teaspoon of pepper, a teaspoon of paprika and a teaspoon of salt
- 30 ml of olive oil
- 70 g cheese (I had gouda)
- 15 cherry tomatoes
- 3 sprigs of fresh oregano (or dried if you don’t have it, but fresh herbs are always more aromatic)
- fresh basil leaves

Preparation:
Wash the meat and put it in a bowl together with the oil and spices and mix well.
Grate the cheese and cut the tomatoes in half.
Peel the garlic and cut it into slices.

Turn on the oven to 190 degrees Celsius and let it heat up.
In a tray, put the oregano threads and add the meat on top of them. Add the chopped garlic and some pesto on top of the meat.

Spread the pesto evenly over the meat, add the tomatoes, and put 20 ml of water and grated cheese on top. Sprinkle pepper on top and cover with aluminium foil. Place the tray in the preheated oven for ~50 minutes – 1 hour. After 40 minutes, remove the aluminium foil. Put it back in the oven for about 15-20 minutes or until the cheese is nicely browned and the meat is cooked.

Decorate with fresh basil leaves.
Serve it simple or with your favourite salad.
