

Looking for a quick, cosy dessert that feels indulgent but doesn’t require hours in the kitchen? This express apple strudel is your answer! Wrapped in flaky puff pastry, filled with sweet apples, juicy raisins, and crunchy almond flakes, it’s a dessert that tastes like a classic bakery treat, but made in a fraction of the time. Serve it warm with a dollop of whipped cream for that extra touch of comfort.
Apples are naturally low in calories, high in fiber, and packed with antioxidants and vitamin C, helping digestion, supporting heart health, and giving a gentle boost to your immune system. Raisins add natural sweetness, iron, and potassium, while almonds bring protein, healthy fats, and a satisfying crunch.
This strudel is a perfect balance of sweet, sweet, and nutty flavours. Indulgent enough to feel like a treat, yet nourishing enough to enjoy without guilt. It’s fast, fun, and guaranteed to impress, whether it’s a weekday dessert or a weekend treat for friends and family.
Ingredients: (for ~6 portions)
- 3 large apples
- 80 g almond flakes
- 1 lemon
- 1 teaspoon ground cinnamon
- 2 tablespoons of flour
- 200 g heavy cream (for whipping)
- 2 heaped tablespoons flour
- 1 sheet puff pastry
- 80 g raisins
- 120 g granulated sugar
- 50 g powdered sugar

Preparation:
Preheat the oven to 200°C (390°F) and let it heat up.
Peel and core the apples, cut them into quarters, and then slice each quarter into even slices.

Place the sliced apples in a large bowl and add the granulated sugar, flour, cinnamon, lemon juice and raisins. Mix everything well with your hands. Then add the almond flakes and stir until everything is evenly combined.

Place the puff pastry sheet on a baking tray lined with parchment paper. Transfer the prepared apple mixture onto the center, leaving some space around the edges. Fold the short ends of the pastry over the apples, then fold the long sides in the same way, sealing the edges well. Carefully turn the strudel over so that the sealed side is on the bottom of the tray. Prick the surface lightly with a fork.

Place the strudel in the preheated oven and bake for 40–45 minutes, or until it’s beautifully golden brown.
Meanwhile, prepare the whipped cream. Pour the heavy cream into a bowl, add 30 g of powdered sugar, and whisk well with a mixer until it reaches your desired consistency.

When the strudel is done, remove it from the oven and let it cool for a few minutes. Then sprinkle the remaining 20 g of powdered sugar evenly on top.

Serve warm, with the whipped cream on the side.
Feel free to swap the whipped cream for a scoop of ice cream if that’s more your style.
