Simple cottage pie

Juicy minced beef cooked with sweet leeks and carrots, on a fluffy mashed potato base, finished with melted cheese and baked just until golden, it’s comfort food at its best.

It’s served with a Worcestershire and tomato sauce, which adds a rich, savoury depth and makes every bite extra delicious.

Nutritionally, this dish is a great balance of protein, carbs, and vegetables. Beef provides high-quality protein, iron, zinc, and B vitamins that support energy levels and muscle health. Leeks and carrots bring fiber, antioxidants, and vitamins A and C, supporting digestion and immunity, while potatoes offer potassium and satisfying complex carbohydrates that keep you full longer. The cheese adds calcium and extra protein, making the dish even more nourishing.

Despite being a comfort classic, this cottage pie can fit nicely into a balanced diet: it’s filling, nutrient-dense, and naturally portion-friendly. Perfect for family dinners, meal prep, or those evenings when you just want something warm, wholesome, and guaranteed to please everyone at the table.

Ingredients: (for 4 portions)

  • 1 leek
  • 40 ml Worcestershire sauce
  • 500 g yellow potatoes
  • 1 yellow onion
  • 3 garlic cloves
  • 3 carrots
  • 1 stock cube
  • 70 g tomato paste
  • 2 tablespoons flour
  • 30 g butter
  • 400 g minced beef, mixed with 1 teaspoon smoked sweet paprika, 1 teaspoon garlic powder, and 1 teaspoon onion powder, salt & pepper
  • a few sprigs of thyme
  • 60 g grated cheese (I had Cheddar)
  • 2 teaspoons mustard
  • salt and pepper to taste
  • a splash of milk
  • 150 ml boiling water

Preparation:

Peel the potatoes and cut them into cubes. Place them in a pot with water and bring them to a boil.

Place the stock cube in a bowl, then pour 150 ml of boiling water over it. Stir well until the cube is dissolved, and set aside.

Peel and chop the remaining vegetables as shown in the photo below.

In a deep pan, add the butter and, once melted, add the leek and carrots. Sauté for 2–3 minutes, then add the onion and garlic. Cook for another 2–3 minutes, then add the minced beef. Stir well and cook until the meat is nicely browned and fully cooked.

Meanwhile, preheat the oven to 200°C (390°F) and let it heat up.

In a separate pan or small pot, add the Worcestershire sauce, flour, tomato paste, and the thyme leaves stripped from the stems.

Mix well until you get a smooth paste, then pour in the stock prepared earlier. Stir thoroughly and let it simmer over low heat for about 10–15 minutes, stirring occasionally, until the liquid reduces and you obtain a thick sauce.

By now, the potatoes should be fully cooked, so add a little milk, the mustard, salt, and pepper, then mash everything well until you get a smooth, creamy mash.

Prepare a baking dish and spread the mashed potatoes evenly to create the base of the pie. Add the cooked meat mixture on top and distribute it evenly as well. Sprinkle the grated cheese over everything, add a sprig of rosemary for decoration, and place the dish in the oven for 10–15 minutes, or until the cheese is nicely melted and lightly golden.

Transfer the sauce to a serving bowl and serve it alongside the pie, so everyone can add as much as they like.

Garnish with fresh parsley leaves if you wish, and serve warm.
