Garlic pesto cheesy baguettes – Vegetarian

Got a couple of plain baguettes lying around?

Let’s turn them into a star!

This garlic pesto cheesy bread is everything you want in a comfort bite: crispy edges, gooey cheese, that herby pesto taste, and all the garlicky kick that makes it even more tasty. It’s ridiculously easy to make (thank you, store-bought baguettes), and perfect for picnics, parties, or just as a snack.

You basically slice, stuff, bake, and boom: you’ve levelled up your bread game like a pro.

Trust me, no one’s turning this down.

Ingredients: (for 2 servings)

  • 2 medium baguettes
  • 150 g grated cheese (I had gouda, you can use any cheese that melts nicely)
  • 60 g ready-made pesto
  • 2 cloves of garlic
  • a little pepper
  • 10 ml olive oil

Preparation:
Preheat your oven to 200°C and let it warm up.
Take your baguettes and slice them into 1.5–2 cm thick sections, but don’t cut all the way through! You want the base of the baguette to stay intact.
In a bowl, mix together the cheese, pesto, crushed garlic, a dash of pepper, and the olive oil.
Carefully stuff each cut in the baguette with the cheesy pesto mix, making sure to distribute it evenly.
Place the filled baguettes on a baking tray lined with parchment paper and bake for 10–13 minutes, or until the cheese is melted and bubbly and the baguette is golden and crisp.

Serve it warm, just as it is, or with your favourite spread on the side.

It’s also surprisingly tasty the next day, or even the day after, if you put it in the microwave for a few seconds. That said… chances are it’ll all be gone before then.
