


These homemade Gouda cheese crackers are everything you love about a good snack: crispy, golden, buttery, and irresistibly cheesy. Made with just a handful of simple ingredients like Gouda cheese, milk, butter, flour, and a sprinkle of sesame seeds, they strike the perfect balance between savoury richness and crunchy lightness.
They’re vegetarian, easy to prepare, and far better than anything you’ll find in a store. The Gouda melts into the dough, giving each cracker a deep, nutty flavour, while the sesame seeds add a subtle toastiness that makes every bite even more addictive.
Serve them warm or cold. They are perfect as a quick snack, or you can pair them with dips on a cheese board. Or enjoy them straight from the baking tray. These crackers are the perfect treat for movie nights, gatherings, lunchbox snacks, or whenever you’re craving something savoury and homemade.
Ingredients: (for ~30 crackers)
- 160 g flour
- 100 g grated cheese (I used Gouda, but you can use any cheese you like, that melts well)
- 60 ml milk
- 80 g butter
- Salt and pepper to taste
- 1 tablespoon black sesame seeds (or nigella sativa) + 1 tablespoon white sesame seeds

Preparation:
In a large bowl, combine the flour, grated cheese, salt, and pepper. Mix everything well with your hands until evenly blended. Melt the butter in the microwave for about 30 seconds, then pour it over the mixture. Stir until the butter is fully incorporated. Add the milk next, mix again, and knead until you get a smooth, compact dough. Shape the dough into a cylinder about 6 cm in diameter.
If needed, add a little extra flour until the dough becomes firm and holds together nicely.

Sprinkle the sesame seeds onto your work surface, then roll the dough log over them, gently pressing and rotating it so the seeds stick evenly all around. Transfer the coated dough onto a piece of cling film, wrap it tightly at both ends, and place it in the freezer for about 2–2.5 hours.

After the dough has chilled in the freezer long enough, preheat your oven to 180°C. Line a baking tray with parchment paper. Remove the dough from the cling film and place it on a cutting board. Using a sharp knife, slice it into rounds about 0.5 cm thick, trying to keep the crackers as even as possible. Arrange the slices on the baking tray and bake in the preheated oven for about 15-20 minutes, or until the crackers are nicely golden and crisp.

Take the crackers out of the oven and let them cool for about 10 minutes, then transfer them to a serving plate or rack.

They stay fresh for several days and can be stored in an airtight jar, a container, or a zip-top bag. Although honestly… they probably won’t last that long. Trust me!
You can enjoy them warm or cold, take them on the go, serve them with dips, hummus, baba ganoush, blue cheese and honey, nuts, or simply as a delicious snack. They’re incredibly tasty, and I promise you won’t be able to stop at just one. 😅
