Grilled salmon with pan-fried cajun sweet potatoes

If you’re craving a quick, flavour-packed meal, this grilled salmon with Cajun sweet potatoes is the perfect combo. The salmon turns beautifully flaky on the grill, while the sweet potatoes get pan-fried until crispy, spicy, and irresistible.

Cajun seasoning brings that classic Louisiana kick: smoky, spicy, and herby.

No Cajun mix at home? Just blend paprika (regular or smoked), garlic and onion powder, oregano, thyme, a pinch of chilli or cayenne, plus salt and pepper. Easy and delicious.

You’ll get a colourful, nutritious plate that feels restaurant-level but takes almost no effort. Perfect weeknight win!

Ingredients: (for 2 portions)

  • 1 heaping tablespoon Cajun seasoning mix
  • 2 medium red onions
  • 3 garlic cloves
  • 50 g butter
  • 350 g sweet potatoes, peeled and cut into wedges
  • 4 salmon fillets
  • Salt and pepper
  • Olive oil

Preparation:

Peel the sweet potatoes and cut them into thick wedges. Peel the onions and chop them finely, then do the same with the garlic.

Place the sweet potato wedges in a wide pan in a single layer so they don’t overlap. Add enough water to just cover them, put the lid on, and let them steam for about 15–20 minutes. Check with a fork to see if they’re tender. If there’s any excess liquid left in the pan, drain it off, then return the pan to the heat.

Once they’re soft, add the chopped onion, garlic, butter, and Cajun seasoning, then drizzle generously with olive oil. Mix everything well and let the potatoes brown over medium heat, stirring occasionally. Cook for another 10–15 minutes, making sure to turn the wedges so they crisp and colour evenly on all sides.

While the potatoes finish cooking, prep the salmon. Rinse the fillets, pat them dry with paper towels, then drizzle them generously with olive oil. Season well with salt and pepper on both sides.

I cooked mine on the Tefal OptiGrill, but you can use a regular grill, a pan, a grill pan, or even steam it. Just use whatever method you enjoy most. No matter how you choose to cook it, the salmon will turn out delicious!

When everything is ready, it’s time to plate. Add two salmon fillets per serving and divide the sweet potatoes evenly between the two plates. Serve them as they are or pair them with a fresh salad.

Enjoy!
