Ingredients: (for 4 servings)
(For vegetarian/vegan version, you can replace shrimp with pieces of tofu)
- 100 g green beans
- 200 g fresh peeled shrimp
- 120 g noodles
- 1 large carrot
- 1 tomato
- 150 g Tom Yum paste
- 1 red bell pepper
- 1 leek
- 1 onion
- fresh chopped coriander, for serving
- 1 lime for serving

Preparation:
Wash and clean the vegetables as needed, then cut them accordingly. Slice the carrots in half, then into thin pieces. Dice the pepper, trim the ends off the beans, and cut them in half. Dice the tomato, slice the onion into long strips, and halve the leek before slicing it.

Bring 1.5 liters of water to a boil. Once boiling, add the Tom Yum paste, stir to combine, and let it continue to boil. Next, add all the chopped vegetables except for the tomato, stir, cover, and let it simmer for 10 minutes. After that, add the shrimp and tomato, cover, and cook for another 2-3 minutes on low heat.
Meanwhile, cook the noodles in a separate pot according to the package instructions. Once done, drain them, rinse with cold water, and set aside.

Once the soup is done, prepare your bowls. Place the noodles in each bowl, then pour the hot soup over them. Sprinkle with freshly chopped coriander and serve with a lime wedge for each person to squeeze into their soup. Enjoy! 😊
