Sweet Potato Soup – Vegan

Let’s be honest: sweet potatoes are the cozy sweater of the vegetable world. They’re warm, comforting, and somehow make everything feel a little better. And when you turn them into a silky, spiced vegan sweet potato soup? Pure magic in a bowl.
This soup is everything you want on a chilly day or even just a “meh” Monday.

It’s creamy without cream (thank you, sweet potatoes), packed with flavor, and totally plant-based.

Whether you’re a full-time vegan or just flirting with Meatless Mondays, this recipe is your new go-to for easy comfort food.

So grab those sweet potatoes hiding in the back of your pantry: it’s soup o’clock.

Ingredients: (for 4 servings)

  • 3 cloves of garlic
  • a few sprigs of fresh parsley
  • 2 cubes of vegetable soup base
  • a red bell pepper
  • a large sweet potato (or 2 medium ones)
  • 2 carrots
  • 2 red onions
  • a few tablespoons of olive oil
  • sour cream for serving (optional – we added it at the end for serving, but if you’re making the soup vegan, skip it)
  • salt + pepper

Preparation:

Wash and clean all the vegetables. Dice the peppers, slice the carrots lengthwise and then cut into thin pieces. Peel the garlic cloves and leave them whole. Quarter the onion, then roughly slice it. Finally, peel the sweet potatoes and cut them into cubes.

In a large pot, heat the oil over medium heat. Once hot, add the onion and garlic and sauté for a few minutes until fragrant and slightly softened. Next, add the remaining vegetables and cook everything together for 3–4 minutes, stirring occasionally.

Add the soup base cubes and pour in about 1.5 liters of water. Give it a good stir, then let the soup simmer for around 20 minutes, or until the vegetables are tender.

Once everything is cooked, remove the pot from the heat and blend the soup until smooth using a hand blender. Season with salt and pepper to taste, and it’s ready to serve!

Serve the soup hot, topped with freshly chopped parsley and, if you like, a spoonful or two of cooking cream for extra richness.
