Pasta with mushrooms, spinach and creamy miso sauce – Vegetarian

Tender pasta with earthy mushrooms and fresh spinach, coated in a silky sauce made with cooking cream and umami-rich miso paste. The result is a dish that’s creamy, flavourful, and perfectly balanced.

What makes this recipe special is the creamy miso sauce: it brings together the richness of cream with the deep, savoury notes of miso for a flavour combination that feels both comforting and a little unexpected. Paired with mushrooms and spinach, it creates a delicious, nutrient-packed meal that’s satisfying without being heavy.

Serve it warm, top with a sprinkle of fresh herbs (I use basil leaves) and grate extra grana padano or parmesan cheese if you like.

Ingredients: (for 4 portions)

  • 300 g pasta (whatever you have/like)
  • 400 g fresh spinach
  • 250 g grana padano
  • 250 ml cooking cream
  • 3 tablespoons miso paste
  • 2 cloves garlic
  • 2 medium onions
  • 500 g mushrooms (I had a mix of brown and white champignons)
  • a little bit of olive oil
  • mix seasonings: salt, pepper, a teaspoon of garlic powder, half a teaspoon of dried oregano

Preparation:

Rinse the mushrooms and cut them into large chunks. Peel and finely chop the onion. Peel the garlic cloves and press them through a garlic press.

Cook the pasta in a pot of salted water according to the package instructions. Once done, drain well and set aside.

Heat the oil in a large pot, and once it begins to shimmer, add the mushrooms. Cook for a few minutes, stirring occasionally, until they begin to soften. Add the miso paste, mix well until it’s perfectly incorporated. Add the onion and garlic, and continue cooking for a few more minutes until the onion is tender. Pour in the cooking cream and let it simmer over medium heat for 5–7 minutes, stirring occasionally.

Next, add the spinach gradually, stirring it into the pot until all of it is incorporated. Let it cook for about 2 minutes, then add the pasta and seasonings. Mix well and simmer for a few more minutes. Turn off the heat, stir in about half of the grated cheese, mix, then transfer everything to a large serving bowl.

Garnish with a few fresh basil leaves and serve with extra grated cheese on the side, so everyone can add as much as they like.
