

If you like spicy food and haven’t tried anything containing ‘Nduja yet, don’t wait another minute and go and buy this Italian speciality.
I assure you that you will fall in love with its specific taste and spicy aroma.
‘Nduja (Calabrian: [nˈduːja]) is a spicy, spreadable pork sausage from the Calabria region of Italy. It is a salume that comes from the area around Spilinga.’Nduja is made with meat from the trimmings from various meat cuts and fatback and sun-dried Calabrian chilli peppers, which give ‘nduja its characteristic fiery taste. These are minced together, then stuffed in large sausage casings and smoked, creating a soft large sausage, which is then aged for 3-6 months.
For these quick snacks, you need only a couple of ingredients:
Ingredients: (for ~20-26 snacks)
- one sheet of puff pastry
- ‘Nduja sausage paste
- one egg
- seeds for garnish (I had sesame, nigella sativa and poppy seeds)

Spread the puff pastry sheet on the table. Add a few tablespoons of ‘nduja paste and spread it well on the surface of the puff pastry using a knife or wide spatula. Make sure to spread evenly and cover the edges with the ‘Nduja paste. Fold the sheet of puff pastry in half. You can also add grated cheese if you want, I think it would work wonderfully.

Using a pizza wheel or a sharp knife, cut in half widthwise and then into equal portions, approximately 1.5-2 cm wide, lengthwise.
Twist each strip a few times and place them on in a tray lined with baking paper, making sure to leave some space between them. Scramble the egg in a bowl, and using a pastry brush, brush each one with the egg.

Sprinkle the seeds on top and bake in a preheated oven at 180 degrees Celsius for ~10 minutes or until nicely browned.
