
Guys, I just made this amazing pea soup with sausages—it’s so comforting! The peas are creamy, and the broth is rich and flavorful, with just the right amount of seasoning. The sausages add a perfect savory kick, making it hearty and satisfying. It’s like the ultimate cozy meal in a bowl!
Ingredients: (For 5 servings)
- 400 g peas (I had fresh, but you can also use frozen)
- 250 g smoked sausage (I had chorizo)
- 1 quarter of a medium celery
- 1-2 bay leaves
- 1 leek
- 1 large carrot
- 1 large onion
- 30 g butter
- fresh parsley
- pepper
- 2 bouillon cubes
- ~ 1,800 ml water

Preparation:
Peel and cut the vegetables as follows: carrot into 4 lengthwise and then dice, onion coarsely, celery diced, and leek sliced. Sausage is also cut into slices.

In a large, non-stick pot, add the butter, and when it has melted and heated, add the onion. When the onion has softened, add the carrot and bay leaf and sauté them together for about 2 minutes. Then add the sausage and cook for another 2-3 minutes.

Add the celery and leek and cook for 2 minutes. Add the peas, mix well, then add the bouillon cubes, water, and pepper, mix well, put the lid on, and let it boil until the peas are well-cooked and the rest of the vegetables are boiled as well. Stir periodically.

Finally, add the washed and chopped parsley. Do not add salt unless absolutely necessary, but it should be quite salty from the sausage.
