Sweet chilly chicken wraps

These sweet chilli chicken wraps are the perfect combination of bold flavour and fresh crunch! Tender chicken coated in a sweet and mildly spicy chilli glaze is wrapped up with creamy avocado, crisp carrots, juicy corn, and crunchy red cabbage: all coming together in a refreshing salad that adds texture and balance to every bite.

Wrapped in a soft tortilla, this dish is quick to make, satisfying, and full of vibrant colours and nutrients.

Ideal for a healthy lunch, meal prep, or a fuss-free dinner, the whole family will love it!

Ingredients: (for 4 tortillas / 2 portions)

  • 1 avocado
  • 4 medium tortillas
  • 1 grated carrot
  • 50 g shredded red cabbage
  • 100 g canned corn
  • 1 lime (optional)
  • 200 g minced chicken
  • 35 ml sweet chili sauce
  • 1 roma tomato
  • olive oil
  • 10 g fresh coriander
  • mix seasonings: a little paprika, pepper, a little garlic powder and a little salt
  • 70 g tortilla chips for serving (optional)

In a bowl, mix the grated carrot, chopped cabbage and corn, add a little olive oil, pepper and salt and set aside.

Toss the meat with the spices until well coated. Heat a bit of olive oil in a non-stick pan, and once it’s hot, add the meat. Cook until it starts to brown and develop some color. While the meat is cooking, dice the tomato. Once the meat is nicely browned, stir in the diced tomato and let it cook for another 2 minutes. Add the sweet chili sauce, mix everything together, then turn off the heat.

Put the tortilla wraps in the microwave for 1 minute.

To assemble the wraps, start by adding about 2 tablespoons of the cabbage and carrot salad, then top with a quarter of the cooked meat.

Peel the avocado and slice it evenly, then season lightly with salt and pepper. Rinse and chop the coriander. Top each wrap with a quarter of the avocado slices and a sprinkle of chopped coriander.

Fold the wrap tightly and secure it with a toothpick. Repeat the process for the remaining wraps. Serve with a squeeze of fresh lime juice over the filling and a side of tortilla chips if you want.
