

Spring on a plate: this asparagus and smoked salmon tart is as nourishing as it is elegant, and surprisingly simple to make.
At the heart of the recipe is a creamy base of cream cheese blended with fresh dill and parsley, delivering a boost of calcium, healthy fats, and essential vitamins. The herbs don’t just add flavor, they bring antioxidants and support digestion, making every bite feel light yet satisfying. Topped with tender asparagus, this tart becomes a seasonal powerhouse: asparagus is rich in fiber, folate, and vitamins A, C, and K, supporting everything from gut health to immune function. What makes this tart truly special is how effortlessly it comes together. With just a handful of fresh ingredients and minimal prep time, you can create a dish that looks impressive enough for entertaining yet is easy enough for a weekday meal. Whether served warm or slightly chilled, it’s a perfect balance of creamy, crisp, and savory flavors.
Ingredients: (for one tart ~40/25 cm – 4 portions)
- 1 sheet of puff pastry
- A few sprigs of fresh dill and a few sprigs of fresh parsley
- 150 g smoked salmon
- 400 g asparagus (I used white, but green works just as well)
- 100 g cheese – crème fraîche
- Salt and pepper to taste

Preparation:
Wash the asparagus and trim off the thicker ends, about 3 cm. Peel from the middle down to the base using a vegetable peeler to remove any parts that might remain tough or fibrous.
Bring a pot of water to a boil. Blanch the asparagus for about 5–7 minutes, or until it becomes tender. Once ready, drain it carefully, transfer it to a wooden board, and cut it in half.
Preheat the oven to 200 degrees Celsius.

While the asparagus is cooking, prepare the cheese base in a bowl. Mix the cheese with the finely chopped herbs, then season with salt and pepper.

Line a baking tray with parchment paper and unroll the puff pastry. Using a spatula, spread the prepared cream cheese and herb mixture evenly over the surface, leaving about a 1 cm border around the edges.
Arrange the blanched asparagus halves on top in a neat pattern, then distribute pieces of smoked salmon evenly in between.
Finish by seasoning with salt and pepper to taste.

Bake in the preheated oven for about 25–30 minutes, or until the edges of the pastry are nicely golden and both the salmon and asparagus are lightly browned with a beautiful color.
Let it cool slightly, then transfer to a serving board and cut into equal squares or slices, as you prefer.
