Baked carrots, caramelized in honey, with fresh thyme – Vegetarian

These roasted carrots are perfect as a simple snack or as a side dish for a variety of meals: grilled meats, fish, or roasts. We paired them with baked trout, and they were an excellent match. They’re incredibly quick and easy to make, and the result is absolutely delicious.

Ingredients:

  • 10 carrots
  • 3 tablespoons honey
  • 100 g butter
  • a few sprigs of fresh thyme or savory
  • salt + pepper

Preheat the oven to 220–230°C (430–450°F). Peel and wash the carrots, then cut each one lengthwise into four pieces. Arrange the carrot pieces on a baking sheet lined with parchment paper. In a bowl, mix the butter, honey, and finely chopped thyme. Warm this mixture in the microwave for about 1 minute and 30 seconds.

Brush the carrots generously with the butter and honey mixture, making sure they are well coated.

After evenly coating all the carrots, pour the remaining butter and honey mixture over them in the baking tray. Sprinkle salt and pepper on top.

Place the tray in the oven and roast for about 25–30 minutes. Halfway through, take the tray out and turn the carrots to ensure even cooking. When they’re done, turn off the oven and transfer the carrots to a serving platter. ii transferam pe un platou.

You can sprinkle some freshly chopped thyme on top for extra flavor. They’re wonderful drizzled with a bit of lemon juice, but just as delicious served plain.
