Baked pumpkin with feta & hummus – Vegetarian

This gorgeous baked pumpkin is super easy to prepare and super tasty.

Pumpkin is roasted until it’s beautifully tender and has just a hint of warmth – a little whisper of spiciness to wake up your palate.

We’re serving it with creamy, tangy feta cheese crumbled on top for that lovely salty contrast and earthy hummus. It’s a delightful balance of sweet and savoury, creamy and slightly crumbly, with that subtle spicy kick.

Think of cosy autumn flavours with a fresh, vibrant twist, that can be served any time of the year due to the availability of the pumpkin in stores.

Ingredients: (for 4 portions)

  • 50 g butter
  • 200 g ready-made hummus
  • 300 g crumbled feta
  • a few sprigs of fresh parsley
  • a sweet pointy red pepper (can also be spicy if you want to make the dish even spicier)
  • a teaspoon of chilli flakes
  • 100 g pumpkin seeds
  • 50 ml olive oil
  • 1 head of garlic
  • a pumpkin of approximately 500-600 g
  • salt

Preparation:

Wash the pumpkin, cut off the stem, cut it into 2 equal parts. Using a spoon, remove the seeds as best you can and then cut it into equal slices about 1.5-2 cm.

Melt the butter in the microwave for 30 seconds. Place the pumpkin slices in a large bowl. Pour the melted butter over the pumpkin, add the olive oil, garlic cloves, chilli flakes and salt. Cover and mix everything well in the bowl with large circular movements.

Turn on the oven to 200 degrees and let it heat up. In a tray lined with baking paper, place the pumpkin slices, making sure they don’t overlap. Add the garlic. Bake for 30 minutes.

I didn’t peel the pumpkin, I left the peel on for extra texture and because it has lots of fibre and vitamins. You can peel it if you want, but you won’t even feel it after the pumpkin is cooked.

Now let’s start arranging everything on the plate: put 1-2 tablespoons of hummus, then add 4-5 slices of baked pumpkin, a few cloves of baked garlic, sprinkle with pumpkin seeds, feta, pepper slices and chopped parsley.

Serve with lemonade or anything else you like.
