Broccoli, bacon, and mozzarella bites

Get ready to fall in love with these bites with broccoli, bacon, and mozzarella: they’re basically little flavor bombs that come together with almost zero effort on your part. No frying involved here, just pure oven magic. Think of them as the perfect combination of crispy, savory bacon, melty mozzarella, and the goodness of broccoli, all wrapped up in a bite-sized wonder.

They’re quick to whip up, making them the ultimate snack for when you’re craving something delicious but don’t want to spend hours in the kitchen. Enjoy them on their own or serve as a side to whatever meal you’re working with: either way, you’ll be savoring every bite.

Ingredients: (for about 12-14 pieces)

  • 3 medium-sized broccoli heads
  • 4 eggs
  • 1 bunch of parsley
  • 1 cup breadcrumbs
  • 300 g mozzarella
  • Fresh bacon cubes
  • Pepper

Preparation:

First, boil the broccoli in a pot of salted water, after washing it thoroughly under running water and cutting the florets from the stem. While the broccoli is cooking, grate the mozzarella and cook the bacon in a pan without any oil, frying it until it becomes crispy.

Once the broccoli is cooked, drain it in a sieve and rinse it under cold water. Preheat the oven to 170°C. Next, place the cooked broccoli into a food processor and chop it up. Transfer the chopped broccoli to a bowl, then add the eggs, chopped parsley, breadcrumbs, ground pepper, and cooked bacon. Mix everything thoroughly. If the mixture feels too soft, simply add more breadcrumbs until it comes together.

Line a baking tray with parchment paper and shape the mixture into large balls. Place them evenly spaced on the tray.

Bake the balls in the preheated oven for about 25-30 minutes, or until they are golden brown (depending on your oven’s quirks).

For a vegetarian option, simply omit the bacon.
