
It’s the kind of sweet treat that looks fancy, tastes amazing, and secretly takes almost no effort to make. With a crispy cereal crust and juicy raspberries on top, it’s the perfect combo of crunchy, fruity, and just the right amount of sweet.
It pairs perfectly with a hot cup of tea or coffee, and it’s a total lifesaver when guests show up and you want to impress without spending hours in the kitchen or breaking the bank. Basically, it’s your shortcut to looking like a dessert genius.

Ingredients:
- 400 g raspberries
- 400 ml coconut milk
- 200 g raw almonds
- 200 g plain cereals – wheat, oats, barley, etc. (not muesli or with added ingredients)
- 100 g butter
- 200 g brown sugar
- 2 vials vanilla extract
- 4 heaping tablespoons of cornstarch
- 150 ml milk
- 3 eggs
- A few fresh mint leaves for garnish (optional)
- Extra raspberries for garnish, as desired (optional)

Preparation:
Add the melted butter, almonds, vanilla extract, and cereal to a food processor and blend until the mixture is finely ground and well combined.

Press the mixture into a tart pan, spreading it evenly along the base and up the sides using your fingers. Set it aside for now.
In a saucepan, combine the raspberries and brown sugar, and place over medium heat. Let it simmer for a few minutes until the sugar has dissolved and the fruit has broken down. Remove from the heat and allow it to cool slightly. Then, using an immersion blender, blend until smooth and uniform.
Next, add the milk, coconut milk, vanilla extract, cornstarch, and eggs. Mix everything together until well combined. Return the pot to the stove and cook over medium heat, stirring constantly, until the cream thickens.

Once the cream has thickened, pour it over the prepared crust in the tart pan. Smooth the surface evenly, then place it in the fridge for about 2 hours to set. After it has firmed up, take it out and decorate it however you like. Serve chilled and enjoy!
