Chicken breast in creamy sauce, with sun-dried tomatoes and spinach

Chicken breast in creamy sauce – super easy to prepare. It goes perfectly as is or with a fresh salad. It uses only a few ingredients and is quick to cook, but it guarantees a delicious result.

Ingredients: (for 6 servings)

  • 100 g butter, cut into cubes
  • 250 ml cooking cream
  • a jar of sun-dried tomatoes
  • 100 g parmesan or grana padano
  • 6 tablespoons flour
  • 2 medium onions
  • 2 pieces of chicken breast
  • 7-8 cloves of minced garlic
  • 400 g fresh spinach

Preparation:

Peel and chop the onion.

Wash the meat, and cut the chicken breasts into large, even strips.

Heat a pan and add half of the butter. When the butter is melted, add half of the meat, sprinkle with salt and pepper and cook for 2 minutes on each side. When the meat is browned, remove it to a bowl and do the same with the second half.

When the meat is browned, add the remaining butter to the same pan and sauté the onion. Sauté for about 1-2 minutes, then add the roughly chopped sun-dried tomatoes. Mix well and cook for about 2 minutes over medium heat.

Meanwhile, mix the cooking cream with the flour in a bowl. Use a fork and mix as well as possible to avoid lumps. Add the mixture to the pan over the onion and tomatoes, add a cup of water and mix well. Let it cook for about a minute, add the garlic, mix everything well and turn off the heat.

In a larger pan, transfer half of the sauce you cooked earlier. Add the spinach and press it well with your hand or a spatula.

Add the chicken pieces cooked earlier, pour the other half of the sauce on top, add another cup of water, put the lid on and let it cook with the lid on for about 5 minutes.

After 5 minutes, remove the lid, mix everything well and cook on low heat for another 10-15 minutes, or until the sauce has thickened and has a creamy consistency. Stir periodically.

When it is ready, turn off the heat, add the grated cheese and mix everything well. Season with salt and pepper.

Serve it simple or with a fresh salad.
