


Delicious, easy to prepare and assemble, it will be a lifesaver for a quick lunch or dinner full of flavours and aromas.
Ingredients: (For 3 servings of 2 sandwiches each)
- 18 falafel balls
- 250-300 g classic hummus
- cucumbers
- tomatoes
- red cabbage salad from a jar (like this one https://denningers.com/products/kuehne-red-cabbage-720-ml ) or you can also use finely chopped fresh cabbage rubbed with salt and squeeze the juice really well)
- 6 pita-breads (I had small ones, about 10 cm in diameter)
- a few sprigs of fresh mint
Optional: some yoghurt that you can use as a sauce or dressing / some sriracha sauce, tabasco or another spicy sauce that you like / finely chopped spring onion or finely chopped red onion

Preparation:
Start by browning the falafel balls. In a pan, using a few tablespoons of oil, fry the falafel for a few minutes until it becomes crispy and warm.

Warm the pitas in the oven for 2-3 minutes at 230 degrees.
Cut them in the middle, but not all the way through. Cut the tomatoes and cucumbers into thin slices.

After cutting the pitas and the rest of the ingredients, it is time to assemble the sandwiches. Put a generous spoonful of hummus on each, then slices of cucumber and tomato.

Add 3 falafel balls and crush them a little between your fingers, a tablespoon of red cabbage salad, and mint leaves.

You can serve them like this, or, as I said above, you can add finely chopped spring onions or finely chopped red onions, yoghurt, or a spicy sauce of your choice if you want.
