

This cosy classic comes together with tender chicken, soft pasta, and sweet carrots, all simmered in a rich, velvety broth with just the right touch of cream. It’s pure comfort in a bowl: the kind of soup that makes you feel instantly at home.

Ingredients: (for 3 portions)
- 30 g butter
- 1 leek
- 300 g chicken breast
- 1 large yellow onion
- 2 garlic cloves
- 1 large carrot
- 1 stock cube
- 1 L boiling water
- 10 g fresh parsley
- 100 g pasta of your choice
- 150 ml cooking cream
- salt and pepper
- 1 teaspoon regular mustard
- spice mix made of: ½ teaspoon turmeric, ½ teaspoon curry, a pinch of ground coriander, and a pinch of ground cumin

Preparation:
Cook the pasta according to the package instructions, then drain and set aside.
In a bowl, place the stock cube and pour over 1 liter of boiling water. Stir and set aside.
Finely chop the parsley. Peel and crush the garlic. Peel the carrot, cut it in half lengthwise, then slice it evenly. Clean the leek, remove the outer leaves, wash it well, and slice it. Wash the chicken and cut it into even cubes. Peel and finely chop the onion.

In a large pot, melt the butter. Once melted, add the onion, leek, and crushed garlic. Stir well and cook for about 3–4 minutes until fragrant. Then pour in the prepared stock, add the chicken and carrot, and mix everything together. Stir in the spice blend and the teaspoon of mustard, cover with a lid, and let it simmer for 10–15 minutes, until the carrots are tender and the chicken is cooked through.

Next, add the cooked pasta, cream, and chopped parsley to the pot, then give everything a good stir. Season with salt and pepper to taste, cook for another 2–3 minutes to let the flavours blend, then turn off the heat and serve warm.
