Moroccan couscous with beef

Ingredients: (for 4-5 servings)

  • 1 red bell pepper
  • 1 eggplant
  • 1 zucchini
  • 1 large onion
  • 2 cloves of garlic
  • 200 g couscous
  • 40 g raisins
  • 60 g dried apricots
  • 300 g minced beef
  • olive oil
  • spice mix of: one teaspoon ground nutmeg, one teaspoon fennel seeds, one teaspoon dried coriander, one teaspoon chili, one teaspoon ground cloves, one teaspoon salt, one teaspoon pepper, one teaspoon ground anise
  • 4-5 tablespoons Moroccan harissa sauce

Wash and chop the vegetables. Slice the zucchini in half, then cut into rounds. Dice the eggplant, slice the onion, and dice the pepper. Cut the apricots into small cubes, peel, and crush the garlic.

In a large wok, heat a few tablespoons of oil and brown the meat. Once the meat is no longer pink, add the onion and cook until softened. Next, stir in the spices and cook for about a minute to let the flavors blend.

Next, add the chopped vegetables, apricots, raisins, and crushed garlic. Stir well, then cover with a lid. Let it cook over medium heat for about 15 minutes, stirring occasionally.apacul pus, amestecand periodic.

Meanwhile, in a pot, place the 200 g of couscous and pour in 300 ml of boiling water along with 3-4 tablespoons of olive oil. Stir well, then cover and set aside for about 15 minutes. Once the vegetables have cooked for 15 minutes, add the Moroccan sauce, stir to combine, then add the soaked couscous and mix everything together. Let it cook for another 1-2 minutes.
