Croissant sandwiches with smoked salmon

These warm croissant sandwiches with smoked salmon, avocado, and herby cream cheese are perfect for breakfast or brunch, especially when you want something that looks impressive but is incredibly easy to throw together.

Nutritionally, this combo is also a great balance of healthy fats, protein, and satisfying carbs. The smoked salmon provides protein and omega-3 fatty acids; the avocado adds heart-healthy fats, fibre, and potassium; and the cream cheese with herbs adds creaminess and flavour without much else. The croissant makes it feel indulgent, but paired with these nutrient-rich fillings, it becomes a wonderfully satisfying meal that feels both comforting and elevated.

Rich, fresh, buttery, and packed with flavour, this is one of those easy brunch recipes that always feels special with minimal effort.

Ingredients: (for 2 portions)

  • 4 plain croissants
  • 1 ripe avocado
  • 4 tablespoons herb cream cheese (I used Philadelphia, but feel free to use any brand you like or already have in the fridge)
  • 120 g smoked salmon
  • Freshly ground black pepper

Preparation:

Preheat the oven to 200°C. Once hot, place the croissants in the oven for 3–4 minutes, just until they’re warmed through and lightly golden.

Meanwhile, peel the avocado and slice it evenly.

Once the croissants are warm, remove them from the oven and assemble each one individually.

Using a serrated knife, slice each croissant in half with a gentle horizontal cut, being careful not to cut all the way through. Spread 1 tablespoon of herb cream cheese inside, then add 30 g of smoked salmon, a few slices of avocado, and finish with a little freshly ground black pepper. Close the croissant and repeat with the remaining croissants and fillings.

Serve immediately, while the croissants are still slightly warm.
