

These crispy & cheesy onion bites are the ultimate vegetarian snack: golden on the outside, soft and melty on the inside, and perfect with a cool yoghurt garlic dip. Made with just 2 medium onions and 150g grated cheese (I used Gouda), they’re packed with flavour and seriously hard to stop eating! They are gluten-free, low-calorie, low-carb, and incredibly delicious.
Onions are naturally low in calories (about 80–90 kcal for 2 medium onions) and contain antioxidants plus a little vitamin C, while Gouda adds creamy richness, protein, calcium, and that irresistible cheesy stretch (around 500–550 kcal for 150g). The yoghurt garlic sauce adds extra protein and a fresh, tangy balance.
No Gouda? Try mozzarella for extra melt, cheddar for a stronger flavour, or Emmental/Edam for a mild, nutty twist.
A cosy, crunchy snack ready in no time.
Ingredients: (for ~6 portions)
- 2 medium yellow onions
- 150 g grated Gouda cheese
- a few sprigs of fresh dill, finely chopped
- 1–2 garlic cloves, depending on how garlicky you like it
- 4 generous tablespoons of Greek yoghurt
- salt and black pepper, to taste

Preparation:
Preheat the oven to 200°C.
Grate the cheese. Using a mandoline slicer fitted with the slicing blade, thinly slice the peeled onions into even rounds.
Mix the Greek yoghurt with the peeled and crushed garlic, chopped dill, salt, and black pepper.

Line a baking tray with parchment paper and spread the grated cheese evenly in a single layer. Arrange the onion slices on top of the cheese.
Bake in the preheated oven for about 15 minutes, or until the cheese turns golden and crispy, making sure not to let it burn. Depending on your oven, this can take anywhere from 10–15 minutes or up to 20 minutes, so keep a close eye on it until it reaches that perfect golden, crispy texture.

Remove the tray from the oven and let it cool for about 5 minutes, then cut or break into portions.
Serve with the garlic yoghurt sauce, or enjoy them on their own.
They’re absolutely delicious while still warm, but just as tasty cold. You can even reheat them in the microwave the next day, and they’ll still be great.
Although honestly, there probably won’t be many left by then 🙂
