Padrón Peppers: the easiest little vegan snack with big tapas energy.
If you’re in the mood for something quick, fun, and ridiculously easy, Padrón peppers are about to become your new obsession. These little Spanish green peppers are a classic tapas favourite: lightly blistered in a hot pan, finished with flaky salt, and ready in under 10 minutes. That’s it. Minimal effort, maximum flavour.
The key here is to use authentic Padrón peppers: small, mild green peppers originally from Spain, known for their signature “some are hot, some are not” surprise. Most are sweet and gentle, but every now and then you’ll get a spicy one, which honestly makes them even more fun to eat.
Nutritionally, Padrón peppers are a low-calorie, nutrient-dense vegan snack that still feels exciting. They’re naturally rich in vitamin C, vitamin A, and antioxidants, which support the immune system, skin health, and help fight oxidative stress. Like most peppers, they’re also high in water content, so they’re light, fresh, and hydrating: perfect when you want something savoury without feeling weighed down.
Because they’re usually cooked with just a little olive oil and salt, they stay wonderfully simple and naturally light in calories, making them a great choice for a healthy appetiser, side dish, or party snack. Plus, they’re 100% plant-based, gluten-free, and ideal for those moments when you want something that looks impressive but takes almost no time at all.
Crispy, salty, smoky, and just a little unpredictable. Padrón peppers are proof that the simplest recipes are often the most addictive.
Ingredients (for 4 portions):
- 800 g Padrón peppers
- olive oil
- salt
- peper
- flaky salt

Preparation:
Wash the peppers and place them in a deep bowl. Drizzle generously with olive oil, season with salt and pepper, and toss well to coat evenly.
Transfer the peppers to a large, deep skillet and cook them for a few minutes, stirring occasionally, until they become nicely blistered and charred in several spots: this gives them that delicious roasted pepper look and flavour.

Transfer the peppers to a serving bowl and sprinkle with coarse sea salt on top. Serve warm.
