It’s a simple yet delicious alternative to the classic grilled chicken that’s sure to impress. Perfectly tender and bursting with savory notes, you can enjoy it on its own or pair it with your favorite sides. It pairs especially well with buttery rosemary roasted potatoes or tender baked asparagus for a complete, satisfying meal. Give it a go and you won’t regret it!
Ingredients: (for 2 portions)
- 4 chicken breasts
- 65 ml balsamic vinegar
- 4 tablespoons olive oil
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 3 garlic cloves
- salt + pepper
- 2 tablespoons brown sugar
- fresh parsley for garnish (optional)

Preparation:
Thoroughly wash the chicken breasts and let them drain. If the pieces are too thick, slice them in half. In a large bowl, combine the brown sugar, peeled and sliced garlic, salt, pepper, finely chopped herbs, and olive oil, mixing everything together.

Add the washed and portioned chicken breasts to the marinade. Cover the bowl with cling film and refrigerate for about 5 hours.

After the marinating time, take the chicken out of the refrigerator and gently remove any excess herbs or garlic by hand. (Do not rinse the chicken.)

Heat a little olive oil in a grill pan. Once hot, add the chicken and cook over medium heat for 8–10 minutes on each side, taking care not to burn it.

To finish, sprinkle with finely chopped fresh parsley and serve either on its own, alongside a side dish, or with a fresh salad. Whichever way you choose, it’s sure to be delicious!
