Tart with ricotta and mixed berries

Meet your new favorite excuse to take a break from reality: this ricotta and red fruits tart. It’s vibrant, creamy, and just the right amount of fancy without trying too hard. With its bold colors and rich, tangy-sweet flavor, this tart isn’t just dessert, it’s a mood.

It is smooth and lightly sweet thanks to the ricotta, while the red fruits on top bring that juicy punch of summer-in-a-bite. It’s the kind of dessert that makes you forget your to-do list.

Ingredients: (for a 26 cm pan)

  • 140 g granulated sugar
  • 120 g melted butter
  • 430 g ricotta cheese
  • 70 g sour cream
  • 1 teaspoon vanilla extract
  • 180 g flour
  • 2 packets of baking powder
  • 2 packets of vanilla sugar
  • Zest of 1 lemon and juice from half the lemon
  • 100 g powdered sugar
  • 4 large eggs
  • Butter for greasing the pan
  • Approximately 400-500 g fruit (I used sour cherries and raspberries) – you can use any fruit you like: strawberries, blackberries, wild strawberries, blueberries, cranberries, etc. The key is to choose slightly tart and aromatic fruits.

Preparation:

Preheat the oven to 170°C. In a large bowl, whisk the eggs with the powdered sugar until the sugar is fully dissolved.

Next, add the melted butter, ricotta, sour cream, vanilla extract, vanilla sugar, baking powder, and the grated lemon zest (which you’ve given a good scrub with an abrasive sponge beforehand). Mix everything together until smooth and well combined.

Add the flour and stir until the mixture is smooth and well combined.

Once the mixture is ready, butter the pan with a cube of butter and pour the batter into it.

Top with a generous amount of fruit and place the tray in the oven for about 50-60 minutes, or until a toothpick inserted comes out clean.

Take it out of the oven and let it cool. In a bowl, combine the powdered sugar with the juice of half a lemon, and stir until the sugar is fully dissolved.

We add this glaze to the cake only once it has cooled completely.

You can enjoy it with coffee or tea, share it with friends, colleagues, or loved ones, or, if you’re feeling a bit selfish, keep it all to yourself.
