Creamy leek and parsnip soup with curry – Vegetarian

A delicious, aromatic soup, ultra simple to prepare.

Ingredients: (for 4 servings)

  • 2 large onions (or 4 regular ones)
  • 1 large parsnip (or 2 regular ones)
  • 2 small potatoes
  • 200 ml sour cream for cooking
  • 2 leeks
  • 3 cloves of garlic
  • 2 heaped tablespoons of curry
  • 2 bouillon cubes
  • a little sunflower oil
  • 1 apple
  • mix of nuts and seeds (for serving)

Preparation:

Wash the leeks and finely cut the green part of one of them and set aside (we will use it for serving).

Cut the rest of the leeks into equal slices and put them in another bowl. Peel the parsnip and cut it into large pieces. Peel the onion and cut into relatively small pieces. Wash the apple and cut it into cubes. Peel the garlic and cut into slices. Peel the potatoes and cut them into cubes.

In a large wok, add enough oil to cover the bottom of the pan.

When the oil is hot, add the onion, leek, and garlic and cook until the onion starts to soften. Add the rest of the vegetables, the apple, and the soup concentrate cubes, mix well,l and then add enough water to almost cover the vegetables, no more. Let it boil for a few minutes.

Add the cooking cream plus some pepper, mix well, and cover with a lid. Let it simmer for 15-20 minutes with the lid on, stirring periodically.

When the vegetables are cooked, transfer them to a sturdy bowl, add the 2 tablespoons of curry, and mix well with a vertical blender until you obtain the desired consistency.

Serve with green leek slices on top and sprinkled with nuts and seeds. I had a mix of raw nuts, and I toasted them a little. They turned out great, and the combination was amazing.
