Mashed sweet potatoes with chorizo and sun-dried tomatoes

A dish that you can prepare very quickly and easily. It’s best the 2nd day, after the flavours have blended, but it’s also delicious if you serve it immediately.

Ingredients: (for 6 servings)

  • 1 kg of sweet potatoes
  • 3 medium onions
  • 3-4 carrots
  • 60 g of butter
  • 70 ml of milk
  • 1 chorizo (~200 g)
  • 1 jar of dried tomatoes (~180 g tomatoes)
  • 15 ml sunflower oil
  • fresh parsley
  • salt and pepper

Preparation:

Peel the potatoes and cut them into cubes. Peel and slice the onion. Peel and cut the carrots as you wish, slices or strips.

Put them all together in a pot, cover them with water and boil.

While the vegetables are boiling, drain the oil from the tomatoes and cut them into strips. Cut the chorizo into slices and then each slice into quarters.

Put the oil in a pan, and when it is hot, fry the chorizo.

When it is ready, remove the browned pieces with a slotted spoon, drain them well and put them in a bowl.

Pour the remaining chorizo oil from the pan over the chopped tomatoes while it is still hot, and mix well.

When the vegetables are boiled, drain the water well, add butter, milk, salt and pepper and mash everything until you get the desired consistency.

Transfer everything to a tray and put the browned chorizo and the dried tomatoes, and sprinkle fresh chopped parsley on top.
