Cake with fresh cottage cheese

A cake that is not very sweet and that stays fresh and delicious for many days. My advice is to keep it in the refrigerator and heat your portion in the microwave for 30 seconds before eating. This will make it warm and soft and will bring all the aromas to the surface.

Ingredients: (for 12 portions – a 26 cm in diameter tray)

  • 400 g fresh cottage cheese
  • 3 eggs
  • 200 g sugar
  • 200 g flour
  • 80 ml sunflower oil
  • 50 g butter
  • 1 sachet baking powder (~15g)
  • 200 g dark chocolate
  • 40 ml milk
  • vanilla essence
  • strawberries + fresh mint leaves + coconut flakes for decoration (you can use other fruits that you have at home or that you like and think would suit this cake)

Preparation:

In a bowl, using a spoon, mix the cottage cheese, eggs, oil, vanilla essence, flour, sugar and baking powder.

When all the ingredients are well mixed and you have obtained a compact composition, transfer it to a tray with baking paper (mine was 26 cm in diameter). Spread the composition evenly in the tray with the help of a spoon. Put the butter in the microwave for ~30-40 seconds (or until it is melted), and then brush the dough with it.

Preheat the oven to 180 degrees and when it is hot, bake the cake for ~25-30 minutes or until nicely browned.

When the cake is baked, remove it from the oven.

In a saucepan, over medium heat, put the chocolate and milk and stir with a fork until the chocolate is completely melted and you have obtained a homogeneous mixture. Using a spatula, spread the melted chocolate evenly over the cake.

Garnish with coconut flakes, mint leaves and strawberry slices.

It’s delicious warm. You can serve it with a little agave syrup poured on top or as is.

I recommend heating it for 30 seconds in the microwave when you will eat it in the following days.
