Tagliatelle with garlic and mushrooms – Vegetarian

Often, when we get home from work in the evening, we want to cook something quick. Pasta is always an easy option that offers many possibilities; it cooks fast and allows us to improvise with whatever we have on hand. For this dish, you will need:

Ingredients: (for 4 portions)

  • 500 g tagliatelle
  • a few sprigs of fresh oregano (or dried if fresh isn’t available)
  • 7-8 fresh champignon mushrooms
  • 2 small onions
  • 200 g sour cream
  • 300 g yogurt
  • 3-4 garlic cloves
  • 100 g butter
  • 150 g spicy gorgonzola
  • salt + pepper

Preparation:

Wash and clean the mushrooms, then slice them. Peel the onions and cut them into thin strips. Peel the garlic and slice it.

Fill a pot with water, add salt, and bring it to a boil for the pasta. Once boiling, add the pasta and cook according to the time indicated on the package.

In a wok, melt a little more than half of the butter. When melted, add the onions and sauté them briefly. Then add the mushrooms and cook until most of their liquid has evaporated. Next, stir in the sour cream and yogurt and mix everything together.

Let the mixture simmer briefly, then add the garlic, salt, and pepper. Bring it to a few more boils. Meanwhile, once the pasta is cooked, drain it and toss it with the remaining butter. After the butter has fully melted, add the pasta to the wok and combine it with the sauce.

Add the chopped oregano and mix everything thoroughly.

Serve topped with pieces of gorgonzola cheese.
