

Perfect for a leisurely morning when you have time to savor something delicious, these baked eggs with fresh herbs and mozzarella are both flavorful and nutritious. Simple to prepare yet wonderfully satisfying, they’re an ideal choice for a cozy breakfast or brunch. Treat yourself to a comforting dish that’s as easy to make as it is delightful to eat!
Ingredients: (for 2 servings)
- 4 eggs
- 4 heaping tablespoons of sour cream
- a few sprigs of parsley
- a few sprigs of dill
- 4 slices of mozzarella
- a few fresh basil leaves for garnish (or dried if fresh isn’t available)
- salt + pepper

The sour cream is placed in a sieve for a few minutes to drain off any excess water. Meanwhile, prepare two ovenproof dishes and preheat the oven to 220 degrees Celsius. In each dish, add 2 tablespoons of sour cream, finely chopped dill and parsley, salt, and pepper, then mix everything together with a spoon.

On top of each dish, add two eggs.

On top of the eggs in each dish, cut two slices of mozzarella into small cubes and spread them evenly. Sprinkle a little more salt and pepper, then place the dishes on a baking tray and bake in the oven for about 15 minutes.

When they’re done, carefully take them out of the oven to avoid burns, let them cool for a few minutes, and serve them topped with freshly chopped basil.
