

A super quick, flavorful recipe from Asian cuisine. It takes about 20-25 minutes to prepare, it is the ideal solution if you want a dinner or lunch that is quick and easy to make.
Ingredients: (for 4 portions)
- 600 g ready-boiled noodles (or 250 g dried ones that you boil with a little salt and set aside to drain)
- 300 g beef strips
- 3 tbsp black bean sauce with garlic (if you can’t buy it, then prepare the sauce yourself from: 60 ml soy sauce, 3 crushed garlic cloves, a teaspoon of starch and 40 ml water)
- 200 g shiitake (or any other type of mushroom you like)
- 300 g frozen sugar snaps
- 150 g chopped red onion
- 1 tablespoon white wine vinegar
- 1 tablespoon of sugar
- sunflower oil
- salt

Preparation:
Heat some sunflower oil in a wok or large frying pan. Fry the chopped red onion for 2 minutes on medium heat. In the meantime, cut the large mushrooms in halves; the smaller ones can remain whole.
Add the mushrooms to the pan with a pinch of salt and fry for 4 minutes. Then add the sugar snaps and fry until they are completely defrosted; this takes about 5 minutes. Stir regularly. Once done, remove all the vegetables from the pan, put them in a separate bowl and cover to keep warm.

Heat some sunflower oil in the same pan you used till now, and fry the beef strips with a pinch of salt on high heat for about 3 minutes.

Then add 3 tablespoons of black bean sauce, 1 tablespoon of white wine vinegar and 1 tablespoon of sugar and stir well. Put the vegetables back in the pan and mix everything.

Then add the boiled noodles to the pan and cook for another 2 minutes until they are nice and hot.
Serve immediately.

Garnish with some fried onions or spring onions if desired.
