Fresh ravioli with mushrooms and spinach – Vegetarian

I like simple recipes that have super tasty results. 🙂 That’s the case with this recipe. It’s super simple and quick to prepare, with just a few ingredients, and the result is downright delicious.

Ingredients: (for 4 portions)

  • 100 g green pesto
  • 250 g mushrooms (I had 250 g brown champignons and 100 g shiitake – you can use any mushrooms you like)
  • 400 g spinach (I had fresh, but you can use frozen)
  • 200 ml cooking cream
  • 40 g pine nuts
  • 500 g ravioli (I had with ricotta & spinach)
  • 10 ml olive oil

Preparation:

Bring a pot of water to a boil and prepare the ravioli according to the instructions on the packaging.

Heat a frying pan without oil and roast the pine nuts. Set aside in a bowl.

Cut the mushrooms into quarters or halves. Heat the oil in a frying pan and fry the mushrooms for 5 minutes.

Then add the spinach, the green pesto and the cooking cream. Mix all together and cook for a few more minutes.

Mix the ravioli through the creamy pesto sauce and garnish the pasta with the pine nuts.

Tip:
Extra tasty with some grated cheese, such as Parmesan or Grana Padano.
