Ingredients:
- 450g all-purpose flour
- 2 packets of baking powder
- 1 tablespoon baking soda
- 175g butter
- 175g brown sugar
- 175ml maple syrup
- 175g honey
- 1 beaten egg
- 300ml whole milk
- spice mix made from: 1 teaspoon ground cinnamon + 1 teaspoon ground ginger + a few freshly ground cloves (or pre-ground) + 1 teaspoon ground nutmeg.
Preparation:
Line a deep baking tray with parchment paper. Preheat the oven to 160°C (320°F). In a bowl, mix all the dry ingredients except the sugar. In a saucepan, combine the butter, brown sugar, maple syrup, and honey. Heat gently, stirring constantly until the sugar has completely dissolved. Remove from the heat and let the mixture cool.
In a separate bowl, whisk the egg into the milk, then pour this into the cooled mixture from the saucepan. Stir to combine. Add the flour along with the baking powder, baking soda, and spice mix to the wet ingredients, mixing well until you get a smooth, glossy batter.
Pour the batter into the prepared tray and bake in the preheated oven for about 30-40 minutes, or until a toothpick inserted in the center comes out clean.
Optionally, decorate with melted chocolate or serve plain.
