Baked cabbage, with bacon and mashed potatoes

Quick and easy to prepare and full of flavour, this sauteed baked cabbage, mixed with bacon and mashed potatoes, is a delight.

The largest supermarket chain in the Netherlands has a monthly magazine in which you can discover all kinds of recipes. Many of them are very ingenious or with unexpected and surprisingly good combinations. This is also the case with this cabbage, a combination that initially intrigued me, but literally, they go perfectly together. 🙂

Ingredients: (for 6 servings)

  • 1 kg of pickled cabbage
  • 300 g of bacon
  • 200 g pancetta or prosciutto (or any type of ham you like)
  • 3 teaspoons cumin seeds
  • pepper
  • 20 ml of olive oil
  • 2 large onions
  • 4 cloves of garlic
  • 500 g potatoes
  • fresh parsley

Preparation:

Boil the potatoes in a pot. When they are boiled, drain the water, add pepper, and mash them. Leave it aside.

Peel the onion and cut it into small pieces. Peel the garlic and crush it with a garlic press.

In a large pan/wok, put the olive oil and when it has heated up, add the onion. Saute for 2-3 minutes, then add the bacon and saute together until the bacon starts to brown. Add the garlic and cumin and mix well. Then add the finely chopped cabbage (drained well), sprinkle pepper on top, mix well, and cook on medium heat for about 30 minutes, stirring periodically.

Start and let the oven heat up to 190 degrees.

Prepare a tray. Divide the ham into 2, and put half on the base of the tray. Add half of the cabbage prepared earlier, then the mashed potatoes in one layer, and put the rest of the cabbage in one layer and the rest of the ham. Add a little pepper.

Put the tray in the hot oven for ~40 minutes or until the ham on top and the cabbage are nicely browned. Remove from the oven, sprinkle with freshly chopped parsley, and serve. It goes very well with a spoonful of sour cream and is definitely the kind of food that is better the next day. 🙂
