Quinoa with salmon and green vegetables

Deliciousness on your plate. Nutritious and quick to make.

Ingredients: (for 4 servings)

  • 2 large zucchini
  • ~ 400 g fresh salmon
  • 4-5 spring onions
  • 200 g of quinoa
  • a piece of fresh ginger
  • 120 ml soy sauce
  • 5 cloves of garlic
  • 200 g of green beans
  • 2 tablespoons of sesame seeds
  • 30 ml of olive oil
  • 2 avocados for serving (optional)

Preparation:

Wash the fish, remove the skin, and cut it into equal cubes of medium size. Cut the zucchini in half lengthwise and then into equal slices, about 1 cm thick. Wash, clean, and finely chop the spring onion. Peel the garlic cut it into slices and peel and finely chop the ginger. Cut the green beans in half.

In a pot, bring to a boil some water with a little salt add the green beans and cook them for ~ 7-10 minutes.

In another pot, cook the quinoa according to the instructions.

When both the green beans and the quinoa are cooked, drain them well and leave them aside.

While the quinoa and green beans are cooking, in a wok add some olive oil and when the oil is hot, add the fish cubes and brown it on medium-high heat for ~7 minutes or until they start to take on colour. Mix them periodically, taking care not to destroy the fish. When the fish is browned, add half the amount of soy sauce and sesame seeds, mix well, and turn off the heat. Leave it aside.

In another wok or a large pan, put a little olive oil. When it is hot, add the garlic, ginger, and zucchini. Brown them over medium heat for ~5 minutes or until the zucchini starts to soften. Add the previously boiled and drained green beans. Mix well.

Cook together for about another minute. Then add the green onion and the rest of the soy sauce and mix well.

Let it cook together for 2-3 minutes, add the drained quinoa, mix well, cook ~1 more minute, and then turn off the heat.

Transfer to a bowl and put the cooked salmon on top.

Serve with a quarter of an avocado cut into slices.
