Boterkoek – Dutch butter cake

Ultra delicious and super easy to prepare. It is good cold, served at room temperature or from the refrigerator, but you can also enjoy it warm.

A classic cake in the Dutch kitchen.

Ingredients: (for a 23 cm pan – ~8 servings)

  • 250 g white flour
  • 200 g butter at room temperature (cut into cubes)
  • 160 g sugar
  • 2 eggs
  • grated peel from an organic lemon
  • vanilla essence
  • Flaked almonds or whole almonds without skin

Preparation:

Mix all the ingredients in a bowl, except one egg. Mix well, using your hands, until you have a compact dough. Transfer everything to a tray and level the surface with your fingers. Refrigerate for 30 min.

After 30 minutes, take the cake out of the refrigerator. Turn on the oven to 180 degrees Celsius and let it heat up. Beat the remaining egg in a bowl and distribute it on the top of the cake with the help of a pastry brush. Sprinkle almond flakes on top.

Place in the preheated oven for approximately 30-40 minutes or until the cake is nicely browned.

Let it cool and then refrigerate for at least 2 hours. You can also serve it warm, but it is better cold.

The texture is compact and moist, and the cake is full of flavor. It goes great with coffee, tea, or ice cream.
