Pies with feta cheese and spring onions – Vegetarian

Whether you serve them warm for lunch, pack them for a picnic, or snack on one while standing in the kitchen (we’ve all done it 😄), they’re guaranteed to hit the spot.
The salty feta pairs perfectly with the fresh zing of spring onions, making each bite savoury, satisfying, and just a little bit addictive. Oh, and did I mention they’re vegetarian? Bonus!
Easy to make, easier to eat – you’ve been warned.

Ingredients: (for 8 servings)

  • 500 g feta
  • 470 g flour
  • 390 ml plain yogurt
  • 6-7 spring onions
  • 15 g baking powder
  • a little pepper
  • A little olive oil

Preparation:

Prepare the dough by mixing the yogurt with flour, baking powder, and a little pepper. Mix with your hands until homogeneous and until all the ingredients are well incorporated. Sprinkle your work surface with flour and knead the dough a little more. Make a ball and divide it into 8 equal ball-shaped pieces. Leave them aside for a while.

In a bowl, mix the shredded cheese with the finely chopped onion. With the help of a rolling pin, take a ball of dough and stretch it as best as you can. Divide the cheese filling into 8 equal parts and put one portion on each stretched ball of dough. Fold it in half and then seal the edges, twisting them together. Proceed in this way until you have 8 pies.

Put a little olive oil in the pan, and when it has heated up, put one pie at a time. Brown them for 1-2 minutes on each side, checking that they don’t burn. Turn them on the other side using a spatula. Fry them on medium heat. Before baking each pie, re-grease the pan with a little oil.

They are incredibly tasty if you serve them warm.
