


Made with a mix of sweet potatoes and regular potatoes, sweet peppers, carrots, and a touch of garlic and onion, this soup brings a perfect balance of natural sweetness and rich depth of flavour. Topped with crunchy roasted pumpkin seeds and a swirl of cool sour cream, it’s as pretty as it is tasty.

Ingredients: (for 4 portions)
- 1 large yellow onion
- 2 soup base concentrate cubes
- 2 cloves of garlic
- 1 large sweet potato
- pumpkin seeds
- ~350 g yellow potatoes
- 2 red sweet peppers
- 30 g butter
- 2 large carrots
- 50 g sour cream
- 1 heaping tablespoon Italian seasoning mix
- 1 litre of hot water

Preparation:
Wash and clean the vegetables, peeling them and removing any seeds. Cut the potatoes into large cubes. Dice the peppers. Finely chop the onion. Slice the carrots into half-rounds, and mince the garlic with a knife.
Boil the water and pour it over the soup base cubes in a bowl. Stir well and set aside.

In a large pot, melt the butter, then sauté the onion and garlic for about 2 minutes. Next, add all the remaining vegetables and the seasoning mix. Stir well and cook together for another 2 minutes, stirring occasionally.

Next, pour in the litre of prepared broth, give it a good stir, and cover the pot with a lid. Let it simmer gently for about 20 minutes, stirring occasionally to ensure even cooking.

Turn off the heat, then season with salt and pepper. Blend everything using an immersion blender until you achieve a smooth, creamy consistency.
Transfer the soup into bowls and garnish with a swirl of sour cream and a sprinkle of pumpkin seeds.
Enjoy it as it is, or pair it with crunchy croutons or a slice of toasted bread for an extra treat.
