

I had a lot of pieces of various types of cheese in the fridge, and I thought it would be a shame to let them spoil.
So I thought it wouldn’t be a bad idea to try making some baked cheesy peppers. 😀 The result was an extremely easy-to-make and extremely tasty appetizer, which I will definitely repeat when I have guests or at a party.
Ingredients:
- 30 ml of olive oil
- ~800 g mini peppers (the snack ones – I also had a few jalapenos)
- ~500 g of various types of cheese (I had Gouda, blue cheese, Saint Paulin and some Caprimera Liguria – but you can use any combination of cheeses you have in the fridge ☺️)
- a few strands of spring onion
- a bunch of parsley
- a bunch of dill
- pepper
- a teaspoon of chili flakes

Preparation:
Wash the peppers and cut them in half lengthwise. Remove the seeds. Put the peppers in a bowl.

When you’re finished cleaning the peppers, add the olive oil and pepper over them and mix well.
In a separate bowl, grate the cheese. Cut the green onion as small as possible and finely chop the parsley and dill. Add the chilli flakes and mix well.

Fill each half of the pepper with the cheese mixture, taking care not to put too much and press the mixture well into the pepper.

Add them gradually to a tray prepared with baking paper, and make sure to put them as straight as possible so that there is no risk of the filling leaking out of them when they are in the oven.
When you are done, put the tray in the preheated oven to 200 degrees Celsius and bake them for ~15-20 minutes or until they are nicely browned.
When they are ready, let them cool for 3-4 minutes and then transfer them to a plate.
Serve them warm; they are DELICIOUS! 💜
