Colorful salad with arugula, avocado and strawberries – Vegetarian

A vibrant mix of colors and flavors that’s as delightful to the eyes as it is to the palate. This salad combines the peppery bite of arugula, the creamy richness of avocado, and the sweet juiciness of strawberries for a truly refreshing experience. Easy to prepare and perfect for any meal, it’s a must-try that will pleasantly surprise you with every bite!

Ingredients: (for two servings)

  • 100 g arugula leaves (if you don’t like arugula, you can substitute it with fresh baby spinach)
  • A large handful of raw almonds
  • 10 cherry tomatoes
  • Feta cheese, as much as you like
  • 10–15 strawberries
  • Olive oil
  • Vinegar
  • Salt + pepper
  • 4 small avocados or 2 large ones

Preparation:

Prepare two salad bowls or plates and evenly divide all the ingredients between them.
Start by washing the arugula and placing it as a base on each plate.
Wash the cherry tomatoes, cut them into quarters, and add them on top.
Peel the avocados, slice them in half, then cut them into even slices and arrange them in the salad.
Next, wash and hull the strawberries, slice them into quarters, and add them to the mix.
Add the whole almonds for a satisfying crunch.
Cube the feta cheese and sprinkle it over the salad.
Finish by drizzling with olive oil and a splash of vinegar, then season with salt and pepper to taste.

And that’s it: fresh, colorful, and ready to enjoy. What could be easier?
