Chocolate cake – gluten free

A rich, chocolatey treat made with just six ingredients, perfect even for those with gluten intolerance, as it contains no flour at all. This decadent cake pairs beautifully with a cup of coffee or tea, a scoop of your favorite ice cream, or can be enjoyed just as it is. It is delicious in every form.

Here’s what you’ll need to make it:

Ingredients:

  • 300 g dark chocolate
  • 140 g butter
  • 8 eggs
  • 200 g granulated sugar
  • 40 g cocoa powder (plus about 2 tablespoons for dusting on top at the end)
  • a pinch of salt

Preparation:

Preheat the oven to 180°C. Separate the egg whites from the yolks.

Place the butter and chocolate in a heavy-bottomed pot and gently melt them together, stirring until smooth and fully combined. Be careful not to let it boil.

Remove the pot from the heat and let the mixture cool for about 10 minutes. Once cooled, whisk in the egg yolks until fully incorporated. Then, add the cocoa powder and mix thoroughly.

Set this mixture aside. In a separate bowl, beat the egg whites with the sugar on medium speed until they form a glossy, white meringue that holds its shape and doesn’t slide when the bowl is turned upside down.

Once the egg whites are whipped, gently fold them into the chocolate and yolk mixture in gradual additions, using a whisk to combine with circular motions from the bottom up. This ensures the egg whites are fully incorporated without losing their volume.

You’ll end up with a light and airy batter. Prepare a springform pan (I’m using a 26 cm one) by lining the bottom with parchment paper. Pour the batter into the pan and bake in the preheated oven for 30 to 35 minutes, or until done.

When the baking time is up, remove the cake from the oven and let it cool for at least 10 minutes. Then, carefully release the sides of the pan, transfer the cake to a plate, dust it with cocoa powder, and serve it warm or chilled. It pairs wonderfully with tea, coffee, juice, ice cream, strawberries, or any accompaniment you prefer.
