

A delicious and easy-to-prepare soup.
Using just a few ingredients, you will get an absolutely delicious soup 🙂
Ingredients: (For 6 servings)
- 800 ml fish soup stock – if you don’t have the fish stock you can use any other soup base – beef/vegetable/chicken etc or you can use 3 cubes of fish/vegetable/beef/chicken flavoured soup concentrate and 800 ml the water
- 2 large fennels
- a few sprigs of fresh dill
- 250 g fresh or thawed shrimps
- 2 large shallots (or 2 white/red/yellow onions – whatever you have)
- 200 ml fermented cream
- 200 g potatoes
- salt + pepper
- 30 ml sunflower oil

Preparation:
Wash the fennel, cut off the base, and cut it into coarse pieces. Peel the shallots, cut them in half lengthwise and then into equal slices. Clean the potatoes and cut them into cubes.

In a pot, heat the oil and when it is hot, add the onion and saute for a few minutes until it softens. Then add the potatoes and cook them with the onion for ~1-2 minutes. Then add the fennel, sprinkle a little pepper and mix well.

Add the soup stock, mix well and let it boil for ~15 minutes or until the fennel is softened and cooked. Take off the heat, add the cream and mix well with the help of a vertical blender until the desired consistency is obtained. At the end, add the finely chopped dill and mix with a spoon.

In a pan add a little oil and brown the shrimps. Season with a little salt and pepper at the end.

Serve the soup with shrimps sprinkled on top and decorate with a sprig of dill.
