Baked potatoes with leeks and cheese – Vegetarian

Delicious and ultra-simple to make, this kind of food is a treat for the taste buds.

Ingredients: (for 4 servings)

  • 600 g small potatoes
  • 5 leeks
  • 50 g butter
  • 200 g gouda cheese (you can also use another type of cheese that melts nicely, or smoked/plain cheese)
  • 6 cloves of garlic
  • 200 ml cooking cream
  • salt + pepper
  • a few sprigs of fresh thyme or rosemary
  • a few sprigs of fresh parsley to serve

Preparation:

Wash the potatoes well with a sponge and cut them in half or quarters, depending on how big they are. Peel the leeks at the ends and cut into pieces of approximately 3 cm. Peel the garlic and cut into slices. Cut the cheese into suitable cubes.

Boil the potatoes for 10 minutes (start counting from the moment the water actually starts to boil). Add the leeks 2 minutes before you turn off the heat.

Start the oven and let it heat up to 190 degrees.

In a pan, add the butter and when it is melted, add the garlic. Mix well and cook for about 1 minute. Then add the cooking cream, mix well add the cheese and sprinkle with pepper. Mix a little and turn off the heat.

Prepare an oven tray.

Transfer the well-drained potatoes and leeks into the pan. Pour the mixture of cheese and cream over them and distribute it evenly. Sprinkle some thyme leaves and a little pepper and put in the preheated oven for about 25-30 minutes or until the food is nicely browned.

When it’s done, sprinkle the freshly chopped parsley on top of it. Let it cool for 5-10 minutes and serve.
